Ginger and Cinnamon Cocktail

Cinnamon Syrup
100 ml sugar
100 ml water
2 cinnamon sticks
Cocktail
2 tbsp fresh ginger, coarsely grated
200 ml apple juice, cloudy
1 lemon
1 batch cinnamon syrup
~150 ml vodka, optional

To get the cocktail really cold, use a shaker and shake all the ingredients with ice. Serve the cocktail without the ice.

Another alternative, if you really want to give your friends a treat, is to serve the cocktails with one large ice cube, the Japanese way. You’ll probably need a different glass for this – whiskey glasses work better.

Freeze a block of ice in a plastic tray, then use a Japanese-style, three prong ice pick to make large, round ice cubes. Of course, you can make these ahead of time, and keep them in a bowl in the freezer.

Bring sugar, water and cinnamon sticks to a boil. Leave it to boil for quite a while – at least 30 minutes.

Grate a piece of ginger – about the size of a thumb – and mix with apple juice in a blender. Remove the bits of ginger with a strainer. If you have a juice extractor you can use that for the ginger, in which case you’ll need only about 1 tsp of juice.

Squeeze the lemon, then mix the apple and ginger juice with cinnamon syrup, lemon juice and vodka. Serve in cocktail glasses.
