Olive Tofu

150 g | silken tofu |
2 dl | olives, with pimiento |
2 msk | olive oil |
1 msk | oregano |
1 tsk | lemon juice |
½ tsk | salt |
Tofu contains a lot of vegetable protein, which is good both for your health and for the environment. This spread is great on a slice of white sourdough bread.

Crush the oregano, then add tofu, olives, olive oil and lemon juice. Mix all the ingredients well in a food processor or with a hand blender.

Add salt to taste. Sometimes you might need to add a bit of extra lemon juice, in order to balance the flavor of the tofu.
