Red Pesto
1 Large Jar
2-3 dl sundried tomatoes
2 dl pitted black olives
1 dl sunflower seeds
2 små garlic cloves
1 fresh tomato
3 msk olive oil
1 tsk lemon juice
salt

Two tips for really enjoying this tasty pesto: fill a ciabatta bread with pesto, some slices of smoked tofu, a bit of ruccola, and a few slices of fresh tomato. Or make it really simple and spread the pesto on a piece of thin crisp bread – delicious!

To soften the sundried tomatoes, you can soak them in boiling water for a few minutes. If you’re using pickled tomatoes, this won’t be necessary.

Mix all the ingredients well using a food processor. Add a little salt, to taste – but remember that the olives and sundried tomatoes are already quite salty.
