Pea and Cashew Pesto

½ tsk | green peppercorns |
2 dl | green peas |
1 dl | cashews |
1 dl | canola oil |
~10 blad | fresh oregano |
½ tsk | salt |
Green peas are a great source of protein. Their nutrients are well preserved while frozen, which means they’re a healthy food that’s available year-round.
If you don’t have fresh oregano, half a teaspoon of dried oregano will work just as well. You can use either frozen or precooked peas.

Start by crushing the green peppercorns using a mortar and pestle.

Mix all the ingredients in a powerful mixer or food processor until the spread is fluffy. It can take up to 3-4 minutes until all the peas are properly mixed.
